Sardine and Egg Salad

Ingredients

120gm tinned Portuguese sardines in olive oil
2 eggs
half a dozen green beans, halved
2 slices spanish onion, broken up
half a small gem lettuce, torn or chopped
2 or 3 truss tomatoes, quartered
juice of half a small lemon
salt & pepper

Method

1. Boil the eggs for 8 minutes.

2. At the 5 minute mark, add the beans.

3. Let cool. Meanwhile, arrange lettuce, onion, and tomato in a serving bowl.

4. Drain sardines but leave them well coated. Break up into chunks (remove spine if preferred).

5. Peel eggs, quarter and add to bowl with beans and sardines.

6. Pour lemon juice over, mix gently.

7. Season with a little salt & peer, and serve.

Serves one.
