
Ingredients
- 60 gm white fish, chopped into bite sized pieces
- 9 cooked cocktail prawns, head, tail and shell removed
- 6 calamari rings, chopped
- 2 tbsp cooked crab meat
- 9 mussels, meat only
- 1 tbsp fennel, diced
- 1/2 small carrot, diced
- 4 green beans, diced
- 1 green onion, diced
- 1 cup cooked rice
- 2 tbsp frozen peas
- 2 cocktail truss tomatoes, quartered
- 3 tbsp Chinese rice wine
- 2 tbsp vegetable oil
- 1 tsp fish sauce
- 1/2 tsp smoked paprika
- 1/2 tsp chipotle seasoning
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
- 4 strands saffron
- 1/2 tsp turmeric
- 1/4 tsp chilli flakes
- 1/2 tsp powdered garlic
- 1/2 tsp powdered onion
- salt & pepper
Method
- Heat 1 tablespoon oil in a non stick frypan to medium-high heat.
- Add fish, prawns, calamari, mussels, cook until fish is browned and cooked through, 4-5 minutes, stirring in 1 tablespoon rice wine to prevent too much sticking.
- Set aside in a bowl.
- Lower heat to medium, add other tablespoon oil to the pan, with the fennel and carrot. Cook, stirring for 2-3 minutes, adding another tablespoon rice wine.
- Add the beans, peas, green onion, rice, herbs, spices, and last tablespoon of rice wine. Keep stirring until vegetables are just cooked.
- Add seafood from bowl plus tomatoes, crab meat and fish sauce. Lower heat to low-medium, stir gently until everything is cooked and warmed through.
- Taste, season with salt & pepper if needed. Serve.
Serves one as main, two as entree.
