Ingredients
2 tbsp mild olive oil
1 chicken schnitzel cut, chopped
1 egg, whisked
1/2 baby carrot, chopped
6 green beans, chopped
1/8 red capsicum, chopped
1/8 yellow capsicum, chopped
1/4 brown onion, chopped
1/2 cup rice, cooked
2 tbsp nasi paste
1 tsp turmeric
1/2 tsp paprika
1/2 tasp salt
1/2 tsp pepper, ground
1 tbsp curly parsley, chopped
Method
1. Heat 1 tablespoon oil in a frying pan over medium-high heat. Add the egg and scramble in the pan until browned. Set aside.
2. In the same pan, fry the chicken until well cooked and browned. Set aside.
3. In the same pan, add the other tablespoon of oil, lower the heat and add the carrots, onion and capsicum. Cook gently until slightly softened.
4. Add the paprika, salt, pepper annd green beans. Stir through and cook for further 3 minutes.
5. Add the chicken, egg, rice, turmeric, and nasi paste. Stir through, raise heat back to medium-high, and cook for further 2 minutes.
6. Stir through the parsley, check seasoning, and serve.
Notes
I forgot to add peas – add frozen with the chicken and egg.
Stir well in last stage to prevent sticking.
